Early Europeans carved Jack O' Lanterns from root vegetables like turnips and beets before pumpkins were introduced from the Americas. These vegetables were used to make lanterns by hollowing them out and placing a light inside. The introduction of pumpkins led to their popularity for this tradition due to their size and ease of carving.
